Black Bean Salsa (Edit recipe)

Black Bean Salsa, in my opinion is the most versatile of all salsas. You can add it to your breakfast burritos, serve it as a side with your protein, enjoy it as an appetizer with your favorite chips and so much more. It is also incredibly easy to make and only requires assembling a few ingredients... no cooking required! I always make it when I am entertaining a big group, when I'm short on time and need to make something fancy or I have run out of groceries and just have the pantry ingredients on hand. Regardless, make this... you'll love it. This recipe is Vegan, Gluten-free and Dairy-free.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large bowl, combine black beans, red onion, green bell pepper, tomato, corn and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, fresh lime juice, cumin powder, garlic powder, salt and paprika.
  3. Pour half of the dressing over the vegetables and stir to combine. Add more as needed.
  4. Serve chilled with your favorite chips, as a side with a protein or add to your breakfast burritos. Enjoy!

Notes

  1. Skip paprika and use finely chopped jalapeño instead.
  2. Add in an avocado or red bell pepper, both work great.
  3. Swap the garlic powder with minced garlic or feel free to skip it entirely.
