Buffalo Chicken Pasta Bake
This is one of my favorite recipes because not only does it taste delicious but it packs in protein and veggies into a comfy cozy meal. If you are hosting for game day, wanting a meal that creates leftovers or serving multiple people - this is the recipe for you!
Ingredients
Crockpot Ingredients
- 1.25 lb1.25 lb1.25 lb Chicken Breast

- 0.25 cup0.25 cup0.25 cup Zero Sugar Medium Buffalo Sauce - Noble Made

Pasta Bake
- 3 cups3 cups3 cups Macaroni Pasta, measured dry

- 4 cups4 cups4 cups Broccoli, chopped
- 2 cups2 cups2 cups Baby Spinach
- 0.5 cup0.5 cup0.5 cup Shredded Mexican Cheese Blend - Organic Valley
- 1 cup1 cup1 cup Plain Greek Yogurt
- 0.75 cup0.75 cup0.75 cup Zero Sugar Medium Buffalo Sauce - Noble Made

- 1 tsp1 tsp1 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Dill, Dried

- 1 grams1 grams1 grams Thrive Market Organic Extra Virgin Olive Oil Spray, to lightly coat pan

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. In a slow cooker (crockpot), add the 1/4 cup buffalo sauce and chicken breast. Cook on low for 6-7 hours. Then shred with two forks
- 2. Preheat oven to 350 degrees Fahrenheit
- 3. Cook pasta according to box instructions
- 4. During the last 2-3 minutes of the pasta boiling, add in chopped broccoli and spinach
- 5. Drain the pasta and veggies, then return back to the pot
- 6. Mix in shredded buffalo chicken, shredded cheese, greek yogurt, remaining buffalo sauce, garlic powder and dill
- 7. Optional a pinch of sea salt and black pepper
- 8. Spray a 13x9 baking pan
- 8. Add the mixture to the 13x9 baking pan and optional add some more shredded cheese to the top
- 9. Bake at 350 for 20-22 minutes (or until it looks like it has a slightly browning top)
Notes
- Can substitute gluten free pasta or any short pasta shape
- Can substitute dairy-free cheese 1:1
- Can substitute dairy-free yogurt however not coconut based and you may have to use less since it will be runnier. Note: the nutritional value will change
- Can eliminate veggies!
