Butterscotch Oatmeal Banana Muffins
A new recipe for you that's great for work day snacks or for your kiddos! Good way to use up bananas and oatmeal from your pantry too.
Ingredients
- 3-43-43-4 Banana, ripe, mashed
- 1/3 cup1/3 cup1/3 cup Unsalted Butter, melted
- 222 Eggs, whisked
- 1 cup1 cup1 cup unsweetened Applesauce, or plain yogurt
- 2 tsp2 tsp2 tsp Vanilla Extract
- 1/2 cup1/2 cup1/2 cup Brown Sugar
- 1.5 cups1.5 cups1.5 cups All Purpose Flour
- 2 cups2 cups2 cups Rolled Oats
- 1.5 tsp1.5 tsp1.5 tsp Baking Soda
- pinch pinch pinch Salt
- 3.5 oz3.5 oz3.5 oz Butterscotch Pudding Mix, (1 package)
- 1 cup1 cup1 cup Semi-Sweet Chocolate Chips, (of choice, I used white and semi sweet)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix all the wet ingredients together well until all combined.
- Pour in the dry ingredients and mix everything together. You can do this by hand or with a mixer.
- Pour into muffin cups and top with a few extra chocolate chips for decoration.
- Bake at 375F for 15 minutes (keeps them bakery style - taller) then reduce oven to 350F for another 20 minutes or so until they are cooked through and golden on top or a knife inserted comes out clean.
Notes
I like to pair these with Greek yogurt at school for some delicious protein and carbs!
