Caramel Snack Cake
This Caramel Snack Cake is a simple one bowl cake that is gluten-free and vegan. Topped with a simple dairy-free cream cheese frosting and a homemade caramel sauce, it makes for the perfect mid-day treat with a cup of coffee!

- 2 whole2 whole2 whole Flax Egg (1 tbsp ground flaxseed + 2.5 tbsp filtered water)
- 0.75 cup0.75 cup0.75 cup Almond Milk
- 0.333 cup0.333 cup0.333 cup Almond Butter

- 0.333 cup0.333 cup0.333 cup Pure Maple Syrup
- 8 oz8 oz8 oz Dairy-Free Cream Cheese - Kite Hill
- 0.25 cup0.25 cup0.25 cup Vanilla Greek Style Yogurt - Kite Hill
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 and prep an 8x8 baking pan.
- In a bowl, combine flour, baking powder, salt and cinnamon.
- Add almond butter, maple syrup, almond milk, flax eggs and vanilla extract.
- Stir until combined.
- Pour batter in baking pan and bake for 25 minutes or until toothpick comes out clean.
- While cake is baking, beat together frosting ingredients until smooth and creamy. Set aside.
- Stir together caramel ingredients and set aside.
- Once cake has cooled, top with frosting.
- Drop dollops of caramel on top, and swirl into frosting.
- To serve, top with extra caramel, if desired.
