A wholefood take on carrot cake; naturally sweet, properly spiced, and finished with dark chocolate for that little bit of indulgence. Soft in the centre, slight crunch outside, and actually satisfying.

These are built with anti-inflammatory ingredients! Walnuts for omega-3 fats, almonds for vitamin E, spices like cinnamon and ginger, and fibre-rich dates to support steady energy and gut health. It’s the kind of snack that feels like a treat but is doing something good for you at the same time.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prep your carrot and ginger: Grate both finely. Squeeze out as much moisture as possible.
  2. Toast the walnuts: Place walnuts in a dry pan over medium heat for 3–5 minutes until fragrant. Let cool.
  3. Make the base: In a food processor, blitz the walnuts into a crumb. Add the dates, almond meal, carrot, ginger, orange zest, cinnamon, nutmeg, salt, vanilla and honey. Blend until it forms a cohesive dough.
  4. Check the texture: It should be soft but hold its shape without sticking to your hands. If it’s too sticky, add a little more almond meal. If too dry, add a date or a splash of water.
  5. Roll: Scoop about a tablespoon of mixture and roll into balls.
  6. Chocolate finish: Dip or drizzle with melted dark chocolate. Place on baking paper and let set in the fridge.
  7. Set: Refrigerate for 20–30 minutes until firm.

Notes

  • Orange zest is what gives it that real carrot cake flavour, don’t skip it!
  • Soak dates in boiling water if they are too firm - they should be squishy in your hand.
  • Store in the fridge, they firm up and get even better.
