Sticky Date Baked Oats
A wholesome breakfast that embodies the taste, flavour, and texture of a sticky date pudding.
The dates provide all the sweetness you need in the pudding itself, while oats and flaxseed add fibre and Greek yoghurt and egg provide protein. It’s warm, comforting and genuinely indulgent without needing refined flour or a heavy dessert-style sauce.
The centre stays deliciously soft and slightly molten while the outside becomes light and spongey, giving you that classic sticky date pudding experience in breakfast form.

Baked Oats
- 70 grams70 grams70 grams Medjool Dates
- 45 ml45 ml45 ml Water, Boiling
- 0.25 tsp0.25 tsp0.25 tsp Baking Soda, (bi-carb in Australia)
- 50 grams50 grams50 grams Oats, Rolled
- 1 whole1 whole1 whole Egg
- 100 grams100 grams100 grams Plain Greek Yogurt
- 0.25 whole0.25 whole0.25 whole Vanilla Bean Pod
- 1 pinch1 pinch1 pinch Himalayan Pink Salt

- 1 tsp1 tsp1 tsp Flaxseed Meal
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder

Date Caramel Sauce
- 3 whole3 whole3 whole Medjool Dates
- 40 ml40 ml40 ml Water, Boiling
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup

- 1 Tbsp1 Tbsp1 Tbsp Plain Greek Yogurt
- 0.25 tsp0.25 tsp0.25 tsp Vanilla Bean Pod
- 0.25 tsp0.25 tsp0.25 tsp Almond Butter

- 1 pinch1 pinch1 pinch Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Date Mixture: Pour the boiling water over all the dates with the bicarb soda and let sit for 15 mins, then mash with a fork into a fine paste.
- Baked Oats: Blend remaining baked oats ingredients with 105g of the date mixture into a batter. Put in a single serve ramekin and bake at 180 degrees for 25 minutes. Pull it out half way through to test, if it is very runny in the centre, mix around with a spoon.
- Caramel Sauce: Mix remaining date mixture with rest of caramel ingredients until is the desired consistency. You may want to blend to make it smoother.
- Serve and enjoy
