Cheesy Broccoli Fritters (Edit recipe)

These cheesy broccoli fritters are three cups of broccoli and half a cup of carrots in a form my kids will actually eat, held together with cheddar, egg and a little whole wheat pastry flour. Steam the vegetables just until a fork goes through, five or six minutes, then let them cool before the egg goes in — hot vegetables scramble it. Three minutes a side in avocado oil and they come out golden.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Put chopped broccoli and carrots in a steamer basket and steam for 5-6 minutes, until a fork can pierce through. Put the vegetables in a large bowl.
  2. Once cool add cheddar cheese, egg, flour, minced garlic, salt and pepper to the bowl and mix until the mixture has a semi-creamy texture.
  3. Place a large pan over medium-high heat and add avocado oil.
  4. Use a spoon to scoop out medium dollops of mixture and place it in the pan. Let cook on each side for about 3 minutes, or until golden brown.
  5. Remove from pan and place on paper towel to absorb excess oil. Enjoy!
