Chicken Burrito Bowl
This chicken burrito bowl is packed with juicy chicken, topped with fresh vegetables, all on top of a delicious bed of dressed lettuce. This bowl is bursting with flavor and is also perfect to meal prep and have throughout the week!
Ingredients
Shredded chicken
- 444 Boneless Skinless Chicken Thigh, OR boneless chicken breast
- 1 cup1 cup1 cup Chicken Bone Broth, Bonafide Provisions
- 1 tsp1 tsp1 tsp Salt, kosher
- 1 tsp1 tsp1 tsp Ground Cumin, ground
- 1 tsp1 tsp1 tsp Chili Powder
- 1 tsp1 tsp1 tsp Garlic Powder
Burrito bowl
- 5 cups5 cups5 cups Romaine Lettuce, chopped
- 111 Black Beans, can, rinsed and drained
- .5.5.5 Red Onion, chopped
- .25.25.25 Red Cabbage, thinly sliced
- 111 Orange Bell Pepper, yellow or, sliced
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 111 Avocado, peeled and sliced
- 222 Green Onion (Scallion), thinly sliced
- Cilantro, to top
Dressing
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 3 Tbsp3 Tbsp3 Tbsp Lime Juice, fresh
- 1 clove1 clove1 clove Garlic, minced
- pinch pinch pinch Salt
- 1 Tbsp1 Tbsp1 Tbsp Cilantro, finely chopped
Additional topping options
- Jasmine Rice, OR white brown rice, farro, quinoa (grains cooked in Bone Both)
- Plain Yogurt, full fat
- Tomato, (preferably when in season)
- Corn, roasted

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Instant pot shredded chicken
- Combine chicken, bone broth, salt, cumin, chili powder, and garlic powder in Instant Pot.
- Cover and set to cook for 20 min (30 min if using frozen chicken).
- Do a quick release, then shred chicken with two forks.
Buritto bowls
- In a small skillet over medium heat, add 2 tablespoons oil and sliced peppers. Season with salt and pepper, let cook for 5-7 min or until softened.
- Whisk your dressing ingredients together.
- Add romaine lettuce to a large bowl and mix dressing in with the lettuce.
- Divide dressed lettuce into 4 bowls and top with shredded cabbage, red onions, beans, bell peppers, shredded chicken, avocado, scallions, cilantro, and salsa.
