  1. In large saute pan heat oil
  2. Add peppers and onions & saute till tender, move to plate
  3. Add chicken & spice & cook till no longer pink
  4. Add peppers & onions back to pan, stirring to combine
  5. Add cilantro & stir in
  6. Spoon mixture over hot baked potatoes
  7. Garnish with limes & more cilantro if desired
