Chicken Jalapeño Soup
The most simple and delicious Chicken Jalapeño Soup that will keep you warm and nourished on any day that you need it!
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Ghee
- 1.5 lb1.5 lb1.5 lb Chicken Breast, cubed
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 1 whole1 whole1 whole Zucchini, chopped
- 1 whole1 whole1 whole Baby Bok Choy, Chopped - leafy part set aside
- 2 whole2 whole2 whole Green Onion (Scallion), chopped
- 1 whole1 whole1 whole Lime, Zested and Juiced
- 2 tsp2 tsp2 tsp Ginger Root, minced
- 2 clove2 clove2 clove Garlic
- 2 Tbsp2 Tbsp2 Tbsp fresh Basil, chopped
- 2 Tbsp2 Tbsp2 Tbsp Mint Leaves, chopped
- 2 Tbsp2 Tbsp2 Tbsp Cilantro, chopped
- 32 oz32 oz32 oz Organic Chicken Bone Broth
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 2 tsp2 tsp2 tsp Sea Salt

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat Ghee over Medium High heat in your soup pot.
- Use 1 tsp Salt and the Black Pepper to season chicken.
- Sear in pot 3-5 minutes per side until fully cooked and slightly crispy.
- Remove and set aside.
- Add Avocado Oil, Veggies, White Parts of Green Onion and 1 tsp Salt to the pot to sauté 3-4 minutes.
- Add Ginger and Garlic to the pot and stir.
- After 5 more minutes, add the chicken + Bok choy greens + Lime zest + Bone Broth to the pot.
- Stir and let simmer 10 minutes.
- Serve with 1/2 lime juices + jalpeno slices + mix of herbs to each bowl.
- Enjoy!
