- greek yogurt protein pancakes & waffles (click for recipe), made into mini size

- Prosciutto, or jamón serrano, finely chopped
- Cotija Cheese, or queso fresco
- Cilantro, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
meatball patties
- preheat oven to 400.
- first add puff chips, monk fruit, & seasonings to a food processor & blitz a few times into a finer crumble.
- to a bowl, add puff chip mixture & remaining meatball ingredients.
- using a medium cookie scoop, make mini meatballs (~24) & smash into a flatter patty,
- place meatball patties on a lined baking dish, then bake for 12-15 minutes.
whipped cottage cheese
- add all ingredients to a food processor; mix until fluffy.
chile lime cherry chamoy compote
- follow the recipe for mixed berry compote, swapping the jam for the cherry pomegranate, the cherries for the berries, & adding in the chamoy sauce.
pan-tinis
- in a skillet, reheat mini pancakes by “toasting” for 1-2 minutes on each side.
- on pancake, add whipped cottage cheese, cherries, meatball patties, chile lime cherry chamoy compote, & sprinkle with crispy jamon serrano, puff chips, cotija cheese, & cilantro.
