chipotle raspberry protein pan-tinis
the pan-tini is back with another sweet & spicy combo. 🔥🍓 chipotle raspberry — a duo i first fell for at a spot called so long saloon in good ole manhattan, kansas! these cobanero masa chip + raspberry infused meatball patties bring the heat (with a little extra chipotle powder for good measure), then get topped with even more smoky-sweet chipotle raspberry in a siete chamoy-infused compote.
a little sweet, a little heat — and a whole lotta flavor packed into every bite.

- 1 lb1 lb1 lb Ground Chicken

- 0.25 cup0.25 cup0.25 cup Cottage Cheese
whipped cottage cheese
- 0.75 - 1 cup0.75 - 1 cup0.75 - 1 cup Cottage Cheese

- mixed berry compote (click for recipe), using raspberry jam + raspberries

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
chipotle raspberry meatballs
- preheat oven to 400.
- first add granola to a food processor & blitz a few times into a finer crumble.
- to a bowl, add granola & remaining meatball ingredients.
- using a medium cookie scoop, make mini meatballs (~24) & smash into a flatter patty,
- place meatball patties on a lined baking dish, then bake for 12-15 minutes.
whipped cottage cheese
- add all ingredients to a food processor; mix until fluffy.
chipotle raspberry compote
- follow the recipe for mixed berry compote, swapping the jam & fruits for the raspberry jam & raspberries + add chamoy sauce & chipotle powder.
pan-tinis
- in a skillet, reheat mini pancakes by “toasting” for 1-2 minutes on each side.
- on pancake, add whipped cottage cheese, raspberries, meatball patties, chipotle raspberry compote, & sprinkle with tortilla chips, queso fresco or cotija cheese, & cilantro.
