chocolate cherry crumble protein cheesecake bites

these protein cheesecake bites are high in protein, low in sugar, & next-level delicious. featuring a crumble that has BTR nation chocolate cherry hearts AND their iconic nana joe's granola collab for the ultimate rich, crunchy, cherry-chocolate bliss.
Ingredients
crust
- 9 oz9 oz9 oz Dark Chocolate Protein Cereal – Catalina Crunch
- 1/2 cup1/2 cup1/2 cup B.T.R. Nation Grain-Free Chocolate Cherry Crunch Granola - Nana Joes, made into a granola "butter"

- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Water, as needed
protein cheesecake
- 2 cups2 cups2 cups Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp The New Favorite Nut Butter - Mixed Up Foods, or nut butter of choice

- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder - Be Well by Kelly

- 1 cup1 cup1 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 444 Eggs
- 1.5 tsp1.5 tsp1.5 tsp Pure Vanilla Extract

- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- mixed berry compote (click for recipe)
- Cherry Pomegranate Superfood Jam - Smash Foods, sub for berry jam
- Dark Cherries, Frozen, sub for berries
crumble
- 0.5 cup0.5 cup0.5 cup B.T.R. Nation Grain-Free Chocolate Cherry Crunch Granola - Nana Joes

- 2 Tbsp2 Tbsp2 Tbsp Black Cacao Powder, or regular cacao powder
- 3 - 43 - 43 - 4 Dark Chocolate Cherry Coconut Cashew Butter Hearts - B.T.R. Nation

- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp mixed nut butter (click for recipe), or nut butter of choice
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 325.
- in a food processor, add cereal & blitz into powder.
- transfer cereal to a bowl, then add granola to food processor & puree into granola "butter"
- combine granola "butter" & cereal powder to form crust; add water as needed.
- add 1 small cookie scoop of crust mixture to the bottom of a muffin tin.
- bake crust for ~10 minutes.
- clean out blender, then add all protein cheesecake ingredients & blend well.
- follow my instructions for making "mixed berry compote", but substitute cherry jam + frozen dark cherries where needed.
- pour 1 large cookie scoop of cheesecake mixture on top of each crust, then add a dollop of cherry compote.
- using a toothpick, swirl compote into each cheesecake bite.
- clean out the food processor again, then add granola, cacao powder, BTR hearts, monk fruit, & sea salt; lightly blitz into a crumble.
- transfer to a bowl, then add in nut butter & a little bit of water until more of a crumble forms.
- add a sprinkle of crumble on each cheesecake bite, then bake for 25-30 minutes or until set.
- refrigerate to allow to complete cool.
- optional: melt a few dark chocolate cherry hearts & drizzle on top + sprinkle with freeze-dried cherries.
- I store them in the freezer & microwave for 10-15 seconds to thaw.
