Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add everything except for the dairy products in a slow cooker. Only use 3/4 cup of chicken broth and reserve 1/4 cup.
- Cook on low for 5-6 hours or high for 2-3 hours.
- Blend the cottage cheese, cream cheese, and 1/4 cup of chicken broth until smooth.
- Add to the crockpot and cook for 30 min.
- Stir and adjust seasonings.
- Shred the chicken (it should easily fall apart) and stir.
- Serve as is or over pasta, veggies, or rice!
Notes
This is purposefully a lightened up version (no heavy cream) but still tastes incredible!
