Crunchy Cure-All Salad

Ingredients

- 2 cups2 cups2 cups Broccoli, finely chopped
- 1 cup1 cup1 cup Red Cabbage, finely chopped
- 1 cup1 cup1 cup Carrots, matchstick/shredded
- 2 - 32 - 32 - 3 Celery, stalks, diced
- 1 cup1 cup1 cup Cilantro, chopped
- 3 - 43 - 43 - 4 Green Onion (Scallion), sliced

- 0.5 cup0.5 cup0.5 cup Sunflower Seeds
- 111 Avocado, diced
- 1 cup1 cup1 cup Carrots, roughly chopped
- 1 cup1 cup1 cup Celery, chopped
- 0.250.250.25 Yellow Onion
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Ginger Root, peeled (about a 2-3 inch knob)

- 0.5 cup0.5 cup0.5 cup Avocado Oil
- 0.25 cup0.25 cup0.25 cup Liquid Aminos, or soy sauce
- 0.25 cup0.25 cup0.25 cup Rice Vinegar
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all of the salad ingredients to a large bowl, and toss together.
- To make the Carrot Ginger Dressing, add all of the ingredients to a high-speed blender, and adjust seasonings to your taste. You can always add a bit of water to thin if desired/needed. Store any extra in an air-tight container or jar in the fridge.
- If serving immediately, pour Carrot Ginger Dressing over your salad, toss, and serve. If making ahead of time, store salad and dressing in separate air-tight containers in the fridge. Toss together when ready to eat. Enjoy!
