- Preheat the oven to 275°F. Line two large baking sheets with parchment paper and divide the popped popcorn evenly between the two pans.
- Add the salted caramel chips and coconut oil to a small saucepan. Heat over low heat, stirring frequently, until completely melted and smooth.
- Drizzle half of the melted salted caramel mixture over each pan of popcorn. Sprinkle each pan with ½ teaspoon sea salt, then gently toss the popcorn until evenly coated.
- Bake for 20 minutes. Remove the pans from the oven, stir the popcorn, and rotate the pans. Return to the oven and bake for another 15 minutes, or until the popcorn feels mostly dry and the coating has set. Keep an eye on it toward the end to prevent the popcorn from getting too dark or crisp.
- Remove from the oven and let the popcorn cool completely on the baking sheets. The coating will continue to set and crisp slightly as it cools.
- Enjoy right away or store completely cooled popcorn in an airtight container.
Notes
Every oven is different so be sure to keep an eye on the popcorn and if it is starting burn turn the oven temperature down or remove sooner than my instructions.
