Easy Greek Cucumber Salad
This is my spin on the viral Greek cucumber salad recipes that were trending a few months back! This recipe is a perfect way to stretch a cucumber out and make it into a perfect starter for your guests.
Ingredients
Dressing
- 0.333 cup0.333 cup0.333 cup Sour Cream
- 0.333 cup0.333 cup0.333 cup Tzatziki (click for recipe)
- 1 Tbsp1 Tbsp1 Tbsp Dill, Dried
- 1 Tbsp1 Tbsp1 Tbsp Salt and Pepper, (to taste)
- 1 Tbsp1 Tbsp1 Tbsp Oregano, Dried, (I used Zoë Olive Oil)
- 3 Tbsp3 Tbsp3 Tbsp Red Wine Vinegar, (I used Zoë Olive Oil)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash and dry your cucumber and place it on a cutting board
- Begin by slicing the entire cucumber out with a mandolin, set aside
- Slice your red onion with the mandolin as well and set aside
- In a bowl, add sour cream, tzatziki, dill, salt, pepper, oregano and red wine vinegar - give it a good mix
- If you see you need to add more red wine vinegar or seasonings to suit your taste, go for it!
- Place the cucumber and red onion into the dressing mixture and allow to marinate for a couple of minutes
- Serve cold and enjoy!
Notes
It's best to allow the cucumber to marinate for at least 15min before serving. Keep cold in the fridge! Serve with slices of mini pita bread for an added touch.
