Easy Vegan Tiramisu (Edit recipe)

This easy vegan tiramisu is not traditional by any means, but is incredibly simple to make and tastes so delicious! Instead of using mascarpone, I used a vegan whipped cream. The result? A light, airy, and delicious tiramisu that is so creamy and full of that rich cocoa and coffee flavour. Plus there is no baking time required!

Ingredients

  • 28 whole Ladyfingers, about 1/2 package of ladyfinger cookies
  • 3 cups Whipped Cream, (I used a vegan whipped cream)
  • 2.5 cups Espresso
  • 1 pinch Cocoa Powder, to sprinkle on top of your tiramisu

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Brew your coffee directly into a bowl and set aside.
  2. Take a 9 x 9 inch baking dish, and add about 2-3 tbsp coffee into the dish.
  3. Take each cookie and dip quickly into the coffee, then add to the bottom of the baking dish.
  4. Repeat for remaining cookies. Cut off pieces of each cookie as necessary so they fit in your tray.
  5. After adding your first cookie layer, use a hand mixer to make the whipped cream come together, or if already prepared, spoon the whipped cream on top of the cookies and spread out evenly. Leave enough room for a second layer of cookies and whipped cream.
  6. Repeat the same process for the second layer of cookies dipped in coffee and align the cookies on top of the whipped cream.
  7. Spread the final layer of whipped cream evenly over the cookies.
  8. Sprinkle cocoa powder on top of the entire cake, then let chill in the fridge for minimum 4 hours or overnight.

Notes

The amount of ladyfinger cookies used depends on the size of your pan. I used a 9x9 inch pan and only did two layers. However, if you choose to have 3 layers, you will need more cookies.
