GF Banana Bread
Easily one of my families favorite home baked recipes. This banana bread is gluten free and easily made vegan by simply substituting a flax egg for the eggs. Enjoy!
Ingredients
- 333 Banana, ripe
- 222 Eggs
- .25 cup.25 cup.25 cup Cashew Butter

- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- 0.333 cup0.333 cup0.333 cup Brown Sugar
- 1 Tbsp1 Tbsp1 Tbsp Pure Vanilla Extract

- 1 tsp1 tsp1 tsp Cinnamon, Ground

- .25 tsp.25 tsp.25 tsp Sea Salt

- 2 cups2 cups2 cups Oat Flour

- .25 cup.25 cup.25 cup Gluten-Free Rolled Oats
- 2 tsp2 tsp2 tsp Baking Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat oven to 350º and grease a loaf pan with either butter or sunflower oil.
- Combine oat flour, rolled oats, baking powder, cinnamon. and sea salt in a medium sized mixing bowl.
- In a large mixing bowl mash bananas with a fork and add cashew butter, oil, eggs, brown sugar, vanilla, and stir wet ingredients together until well combined.
- Add dry ingredients to wet ingredients and mix until dry ingredients are incorporated nicely ( about 5 minutes ).
- Pour batter into prepared loaf pan and bake for 45 minutes or until a toothpick comes out clean after inserted in the center of your loaf.
