Gluten Free S’more Rolls
Gluten free S'MORE ROLLS! All those campfire flavors we crave, wrapped up in a fluffy roll! Filled with chocolate and graham crackers, then baked til gold brown. Topped with soft and oh so tasty, SWEET APRICITY marshmallows while they're still warm, have mercy!! These rolls are made with our G/F DINNER ROLL recipe, yet another variation we hope you enjoy! You can use the HONEY GRAHAM CRACKER recipe from our cookbook "Back Porch Paleo, Homestyle Comfort Food From Our Table to Yours" - find it on page 86. It's egg, gluten, grain and dairy-free! One of our family favorites!
Ingredients
- 1 whole1 whole1 whole Gluten Free Dinner or Cinnamon Rolls (click for recipe)
- .66 cup.66 cup.66 cup Chocolate Hazelnut Spread
- .66 cup.66 cup.66 cup Graham Crackers, your favorite g/f brand, or use the one from our book!
- 20 whole20 whole20 whole Vanilla Marshmallows (Sweet Apricity)
- 2 Tbsp2 Tbsp2 Tbsp Graham Cracker Crumbs
- 1 Tbsp1 Tbsp1 Tbsp Pascha Barely Dark Chocolate Bar, shaved (I used Pascha Chocolate)

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Follow DINNER ROLL recipe through step 3.
- Preheat the oven to 350° and line 2 baking sheets with parchment paper or silpat mat.
- Divide dough in ½ - covering one ½ with plastic.
- Roll out first ½ into a rectangle approximately 9”x12”.
- Spread the top half of dough with ½ of your chocolate, then sprinkle with ½ of the graham crackers.
- Fold over the bottom half of the dough, pressing down slightly.
- Cut into 9-10 strips, about 1” each.
- Carefully roll from folded end to the other, tucking end under the roll, place on prepared baking sheet. Repeat with remaining strips, then the other half of the dough.
- Cover loosely and let rise for about 10 mins.
- Brush with egg wash and a sprinkle of sugar (opt).
- Bake for 15-18 mins til golden brown, then remove from the oven.
- While rolls are hot, place/balance marshmallows on top of each roll. The heat will start to melt the marshmallow. If any start to slide off, carefully place back on top.
- Return to the oven for 1-2 mins more to allow marshmallows to get all melty.
- Remove from the oven, use a butter knife to scoop any marshmallow back on top of rolls that may have slid off in the oven.
- Let those mallows sit for approx. 5 mins then garnish with a sprinkle additional graham cracker crumbs on top as well as some shaved chocolate - ENJOY!
Notes
TIP: don't cut up marshmallows and roll up inside the roll, they will melt/disappear as they bake! 😉
