Gluten Free Snickers Dates (Edit recipe)

These little bites are SO good! While the classic Snickers bar contains peanuts, I enjoy making these with almonds – feel free to use whichever you prefer or make half a batch with each one. Bonus: they store well in the freezer (see notes). These dates are my absolute favorite for their freshness and deliciousness (use code ALLI for a discount). Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Start by gently opening each date without breaking it entirely. If your dates aren't pitted, remove the pits first.
  2. Using a small spoon or your finger, smear a bit of creamy peanut butter inside each date.
  3. Gently press a few sliced almonds onto the top of each date.
  4. In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring until smooth.
  5. Dip each date into the melted chocolate or dip a fork in the chocolate and drizzle it all over the date, ensuring it's well coated. If needed, allow any excess chocolate to drip off then sprinkle a pinch of salt over each date.
  6. Place the chocolate-covered dates in a single layer on a baking sheet lined with parchment paper.
  7. Let the chocolate set by refrigerating the dates for about 30 minutes.
  8. Once the chocolate has hardened, you're ready to enjoy!

Notes

If you make extras, keep them stored in the freezer. Just remember to allow them to thaw for about 15-20 minutes before indulging, as they become wonderfully chewy when not completely frozen! You can also use a sheet of wax paper in between the layers to prevent them from sticking together.
