- Split open the dates and remove any remaining pits if necessary.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
- Dip each date into the melted chocolate, ensuring it's fully coated, then allow any excess chocolate to drip off.
- In a single layer, place the dates on a parchment-lined baking sheet.
- Drizzle caramel on top and add a sprinkle of flake salt.
- Place the baking sheet in the freezer and let the dates set for about 30 minutes to an hour. The caramel may not fully freeze, which is okay.
- Once the chocolate fully sets, remove the dates from the freezer and let them sit at room temperature for about 10-15 minutes to soften slightly before enjoying.
Notes
Store the dates in an airtight container or freezer bag in the freezer with parchment paper between layers to prevent sticking. Before serving, let them sit at room temperature for 10-15 minutes to soften, otherwise they'll be too difficult to bite into. You can use any type of chocolate you prefer, whether dark or sweet!
