Banana Snickers Crunch (Edit recipe)

This recipe is a twist on the popular Snickers Dates recipes I've seen around because I added banana to it. It gives the recipe more depth and a touch a creaminess, and it makes for a snack or dessert that is equal parts irresistible and satisfying!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prepare pitted and sliced dates by arranging on a flat tray with parchment paper (preferably a tray that will fit into your freezer).
  2. Add frozen banana, creamer, and vanilla extract to a high speed blender or food processor and blend until smooth, pausing to scrape down the sides as necessary.
  3. Add banana mixture into a piping bag or a ziploc bag with the corner cut off, and pipe about 1/2-1 tsp of banana mixture into each date.
  4. Moving quickly, follow up with peanut butter, spooning a layer of about 1/2-1 tsp peanut butter over the banana.
  5. Freeze for 5 minutes.
  6. Remove dates from freezer and place peanut halves on top of peanut butter mixture, 2 peanut halves per date, then gently press dates closed (as much as you can, it doesn't need to be perfect).
  7. Freeze for another 5-10 minutes.
  8. In the meantime, add chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30-second increments until smooth, stirring in between.
  9. Gently stir in cereal until it's all evenly combined.
  10. Remove dates from freezer and use a fork to dip them into the chocolate/cereal mixture, taking care to make sure the dates are fully covered in chocolate on all sides, then place back onto the sheet tray.
  11. Sprinkle with flaky salt and freeze for another 20 minutes or until set.
  12. Enjoy!! Store in the freezer so the banana mixture stays frozen.
