My family loves the flavors of Greek food. But in the summer when I just want to get dinner on the table, I want to have a nutritious and delicious meal, I don't want to heat up the kitchen - I look for shortcuts. This is such an easy recipe that offers all the Greek flavors you love with lots of yummy veggies.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prepare the dressing by blending coconut milk and mayonnaise until smooth. Then add remaining ingredients and stir with a spoon. Refrigerate while you prepare meat and salad.
  2. Cook the lamb in oil on medium heat, add salt and herbs and cook. Break up into small pieces. Set aside.
  3. Mix the lettuces, onion, carrots, and olives in a large bowl.
  4. In individual bowls add 1/4 of the salad mix, 1/4 of the meat and top with dressing. Enjoy

Notes

Add whatever other veggies you like to the salad, tomatoes, cucumbers, bell peppers all work wonderfully.
