Gyro Wrap
My family loves the flavors of Greek food, especially the traditional gyros. But like so many yummy foods they are wrapped in a pita, made from wheat. This version uses butter lettuce and is oh so yummy. You can make these AIP if you swap out the greek yogurt and use coconut yogurt.
Ingredients
- 1 lb1 lb1 lb Ground Lamb
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- .5 whole.5 whole.5 whole Yellow Onion, diced
- 2 pieces2 pieces2 pieces Celery, diced
- 1 whole1 whole1 whole Zucchini, diced
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 head1 head1 head Butter Lettuce
- 1 tsp1 tsp1 tsp Sea Salt
- 1 tsp1 tsp1 tsp dried Oregano
- .5 whole.5 whole.5 whole Lemon, juiced
- 1 cup1 cup1 cup Plain Greek Yogurt
- .5 whole.5 whole.5 whole Cucumber, minced
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- .5 tsp.5 tsp.5 tsp Sea Salt
- 1 tsp1 tsp1 tsp fresh Dill, or 1/2 tsp dried dill

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash butter lettuce and set on clean kitchen towel to dry.
- For dressing blend everything together in a small bowl.
- In a skillet cook the lamb in oil on medium until done.
- Add onion, celery, salt, and oregano then stir and cook for 3-4 minutes.
- Add zucchini and garlic stir and cook for 3-4 minutes.
- Squeeze fresh lemon juice on top of meat just before serving.
- Spoon meat into two lettuce leaves and top with tzatziki.
