Healthy PB&J Bars
These Healthy PB&J Bars have been a staple in my own kitchen for years and are an easy, wholesome treat I promise the whole family will love (my own husband asks for these repeatedly)! They only require a handful of simple ingredients and provide all the nostalgic yumminess of perhaps the best flavor combo to ever exist. Trust me - you'll want to make them again and again!
Ingredients
- 1 cup1 cup1 cup Almond Flour

- 3 Tbsp3 Tbsp3 Tbsp Coconut Oil, melted
- 0.75 cup0.75 cup0.75 cup Strawberry Jam, or jelly of choice
- 0.5 cup0.5 cup0.5 cup Peanuts, for topping
- 1 pinch1 pinch1 pinch Maldon Sea Salt Flakes, for topping, optional

- 1 cup1 cup1 cup Creamy Peanut Butter

- 0.25 cup0.25 cup0.25 cup Coconut Oil, melted
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup

- 1 tsp1 tsp1 tsp Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees. Line a loaf tin with parchment paper, and set aside.
- To a bowl, add almond flour, 2 tbsp of coconut oil, and a pinch of salt. Mix together.
- Add mixture to your parchment-lined baking tin and use your fingers to press into an even layer.
- Bake for 12 minutes.
- Meanwhile make the peanut butter fudge by mixing together peanut butter, coconut oil, maple syrup, and vanilla extract.
- When crust is finished, allow to cool before topping with peanut butter mixture. Smooth into an even layer.
- Spoon on several blobs of jelly or jam, and use a knife to swirl.
- Top with a layer of peanuts, and sprinkle with flaky salt.
- Place the tin in the freezer for at least 2 hours to set up.
- Slice into 8 bars, and enjoy! Store the extras in the freezer or fridge.
