Healthy Swedish Meatballs (Edit recipe)

Healthy Swedish Meatballs are perfect on pasta or a bed of fresh spinach!  This dish is so flavorful and oh so juicy!  This comfort food is actually healthy and a great weeknight dinner!  Dare I say, even better than IKEA Swedish Meatballs we all know and love!  It is so easy to make this savory sauce in your own home!  No heavy cream here just coconut cream which is so much healthier for you and still produces the same creamy result!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix Ingredients for meatballs in a large bowl. Add 1 Tbsp Olive Oil to sauce pan on medium heat. Add Meatballs and turn when browned till fully cooked. Remove from pan and drain all excess fat juices. Add butter, oil and flour along with garlic and onion turning down to low-medium heat. Whisk continually until browned a little. Add Beef broth and coconut cream slowly stirring till sauce thickens a bit. Add Worcestershire and Dijon to sauce and whisk till fully blended. Add meatballs back in and continue to cook for 5 minutes occasionally pouring sauce over meat with a spoon or ladle. Sprinkle with parsley as a garnish and enjoy!

Notes

Breadcrumb can be homemade or store bought. Also can be all purpose or gluten free flour I choose vegan butter for non dairy but you can choose your favorite butter of choice Can be served on a salad for low carb option or on a bed of pasta
