Hearth & Home Vegetable Soup
This nourishing soup combines vibrant green cabbage & spinach, carrots, and fennel & onions for a flavorful dish. Packed with protein-rich collagen peptides and fiber-filled chickpeas, it’s the perfect balance of hearty and wholesome. This soup is delicious on its own, but you can elevate your meal by serving it with low-carb Irish soda bread, a simple green salad, or grilled chicken or fish.
Ingredients

- 3 cups3 cups3 cups Green Cabbage, thinly sliced
- 3 whole3 whole3 whole Carrots, sliced into coins
- 4 whole4 whole4 whole Garlic, minced
- 4 Tbsp4 Tbsp4 Tbsp Unflavored Collagen Peptides Powder - Further Food, (about 2 scoops)
- 6 cups6 cups6 cups Vegetable Broth, (up to 8 cups)
- 8 oz8 oz8 oz Chickpeas, rinsed & drained
- 2 sprigs2 sprigs2 sprigs Thyme, Fresh
- 8 oz8 oz8 oz Baby Spinach
- 111 Salt and Pepper, to taste
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sauté the Vegetables – Heat olive oil in a large pot over medium heat. Add onions, fennel, and carrots, cooking until softened (about 5 minutes).
- Incorporate Collagen – Stir in collagen peptides until dissolved, then add garlic, thyme, and cabbage. Cook for another 2-3 minutes until fragrant.
- Simmer – Pour in vegetable broth and apple cider vinegar. Bring to a gentle simmer.
- Add Chickpeas – Stir in chickpeas, letting the soup cook for about 15-20 minutes.
- Final Touch – Add fresh spinach in the last 2 minutes of cooking, allowing it to wilt. Season with salt & pepper to taste.
- Serve & Enjoy – Ladle into bowls and pair with warm, crusty bread or a crisp salad.
