Heirloom Tomato Bruschetta on Sweet Potato Toast
The perfect appetizer! The pairing of the sweet potato and heirloom tomatoes go so well together.
Ingredients
- 1 whole1 whole1 whole Sweet Potato, cut into 1/2 inch thick slices
- 6 - 8 whole6 - 8 whole6 - 8 whole Tomato, diced
- 10 pieces10 pieces10 pieces fresh Basil, diced
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar
- 3 tsp3 tsp3 tsp Garlic, minced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Pre-heat oven to 400F. In the meantime, carefully slice the sweet potato.
- 2. On a baking tray, lay out sweet potato “toasts” and place in the oven for 20 mins. Flip over half way through.
- 3. Combine the rest of the ingredients, season with salt/pepper and toss well to combine. Chill till serving.
