  1. 1. Pre-heat oven to 400F. In the meantime, carefully slice the sweet potato.
  2. 2. On a baking tray, lay out sweet potato “toasts” and place in the oven for 20 mins. Flip over half way through.
  3. 3. Combine the rest of the ingredients, season with salt/pepper and toss well to combine. Chill till serving.
