Hickory BBQ Sauce (Edit recipe)

This is something I’ve been playing with for quite sometime now. One thing that I always loved growing up was great Hickory BBQ sauce. Since I switched to this eating style, it’s been tough to find anything decent that doesn’t contain a bunch of sugars and other junk in it. I think I’ve finally got the hang of this simple yet flavorful BBQ sauce.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add onions and lard to a large saucepan on medium low heat. Season with salt and pepper and carmelize, about 20-30 minutes. The longer you carmelize, the sweeter the sauce will be and the less added sweetener you'll need.
  2. Add garlic and sauté until just beginning to brown, about 5 minutes.
  3. Add tomatoes, smoked paprika, honey, coconut aminos, and apple cider vinegar and let come to a simmer.
  4. Fold in tomato paste and liquid smoke.
  5. Turn heat down to low, cover and let simmer for at least 60 minutes but up to 4 hours.
  6. Transfer to a blender and blend until smooth.
  7. Enjoy.

Notes

If you don't have roma tomatoes, use 1 14oz can of diced tomatoes.
