Hidden Fruit and Veggie Protein Fudge Pops!
This recipe for perfect fudge pops is a great treat for summertime when you are craving ice cream, and want to get in some extra protein, fruit, and veggies! This can be frozen into popsicle molds, or refrigerated in ramekins to make chocolate mousse instead!
Ingredients
- 1/2 cup1/2 cup1/2 cup Semi-Sweet Chocolate Chips, melted and cooled
- 3/4 cup3/4 cup3/4 cup Cottage Cheese
- 1/21/21/2 Banana, half a large banana
- 1/21/21/2 Avocado
- 1/4 cup1/4 cup1/4 cup Baby Spinach
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1/2 cup1/2 cup1/2 cup Half and Half, or milk of your choice
- 1 Tbsp1 Tbsp1 Tbsp Dutch Processed Cocoa Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt the chocolate chips in a double boiler on the stove top, and then allow to cool while you prepare the rest of the ingredients.
- In a mini blender, or food processor, combine the cottage cheese, banana, avocado, spinach, maple syrup, vanilla, half and half (or milk), and cocoa powder.
- Blend together until smooth.
- Pour in the melted chocolate chips, and blend again, scraping down the sides of the blender as needed so the chocolate is fully combined.
- To make fudge pops, pour the mixture evenly in 10 mini popsicle molds. I used Ouddy Life silicone popsicle molds that are 1.46inch wide by 2.68 inch tall.
- Alternately, you can pour this mixture into ramekins and refrigerate for a delicious pudding/mousse!
- Freeze the fudge pops for 2-4 hours, then remove from the molds and enjoy!
