High Protein No-Bake Key Lime Cheesecake Cups (Gluten-Free, and Grain-Free)
This dessert is a delicious and easy way to enjoy the flavors of a Key Lime Cheesecake, but high in protein, and very filling! It's easy to make, looks beautiful, and is perfect to serve to friends and family!
Ingredients
- 16 oz16 oz16 oz Cottage Cheese, Low-Fat
- 5.2 oz5.2 oz5.2 oz Plain Greek Yogurt, 2% greek yogurt
- 1/2 cup1/2 cup1/2 cup Agave Nectar Syrup, you can use maple syrup or honey instead

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1/4 cup1/4 cup1/4 cup Key Lime Juice
- 16 oz16 oz16 oz Heavy Whipping Cream, whipped
- 1 Tbsp1 Tbsp1 Tbsp Lime Zest, key lime zest

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- You can make this recipe in a food processor, blender, or nutribullet. I prefer using a bullet type blender because I find it makes the cottage cheese very smooth.
- In a bullet blender, combine the cottage cheese, yogurt, 1/2 cup plus 1 tablespoon agave (you can also use maple syrup or honey), vanilla extract, and key lime juice.
- Blend until the mixture is completely smooth.
- Transfer the mixture to a container to refrigerate. Place in the fridge while you prepare the cream.
- In a large mixing bowl using a hand mixer, or a standing mixer, whip the heavy cream until you have stiff peaks.
- Fold the whipped cream into the key lime mixture, and then fold in the tablespoon of key lime zest.
- Refrigerate the mixture for 4 hours before serving.
- Before serving, crush the Simple Mills Sweet Thins. You can either pulse them in your blender or food processor, or just crush them with a rolling pin or spatula, after sealing them in a bag.
- You can serve this dessert in any container you would like. We used fun glasses, but a ramekin works just as well.
- Put a layer of crushed cookies on the bottom of your serving cup, top with the cheesecake filling, and the sprinkle the top with some of the crushed cookies. You can sprinkle more lime zest over top, and place a couple lime wedges on top for garnish.
- This will serve up to 8-10 people if you are using a 4 ounce glass to serve them. This is a very filling dessert!
Notes
I recommend starting with 1/4 of lime juice, and then once you fold in the heavy cream, and stir in the lime zest, taste the mixture, to see if it needs more lime juice. If you think it needs more, you can add the lime juice directly to the mixture, and stir it in after you have already folded in the whipped cream.
