These gluten-free holiday monster cookies are thick, chewy, and packed with peanut butter, oats, and festive M&M’s—perfect for holiday baking and cookie exchanges.

- 1 tsp1 tsp1 tsp Vanilla Extract

- 1 tsp1 tsp1 tsp Baking Soda
- 1 cup1 cup1 cup Gluten-Free All Purpose Baking Flour - Bob's Red Mill
- 1 cup1 cup1 cup Sprouted Rolled Oats - One Degree Organic
- .75 cup.75 cup.75 cup Rainbow Candy Coated Chocolate Chips, Holiday colors if desired

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°F. Line baking sheets with parchment.
- Cream butter + sugars until light and fluffy (about 1–2 minutes).
- Mix in: Peanut butter, Egg, Vanilla
- Add: Baking soda
- Stir in: Gluten-free oats, flour and M&M’s/Chocolate chips
- Scoop 2 Tbsp dough balls onto baking sheet.
- Slightly flatten tops.
- Bake 9–11 minutes until edges are set and centers are soft.
- Cool 10 minutes before transferring (they firm up as they cool).
Notes
For extra thick cookies: chill dough 30 minutes.
