Homemade Marshmallows dipped in Peanut Butter and Chocolate
If you're a marshmallow lover but aren't wanting to consume loads of sugar than these are for you! These gut friendly homemade marshmallows are the easiest thing to make and can be done with just a few simple ingredients!
Water, gelatin and monkfruit... or use honey/maple syrup if you'd like!
Ingredients
- 2 cups2 cups2 cups Water
- .33 cup.33 cup.33 cup Premium Gelatin Powder (unflavored) - Further Food
- .5 cup.5 cup.5 cup Baking Sweetener 1:1 Sugar Substitute - Lakanto, honey/maple syrup work well too
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 pinch1 pinch1 pinch Salt
- .25 cup.25 cup.25 cup Creamy Peanut Butter
- 1.5 cups1.5 cups1.5 cups Dark Chocolate, melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a stand mixing bowl, add half your water and the gelatin powder over the top. Let it sit for 10 minutes.
- In a small saucepan, bring the remaining water and sweetener to a simmer on medium heat. Stir regularly.
- Let it boil for several minutes, before removing from the heat.
- Add the hot water mixture into the bowl of a stand mixer. Then add the vanilla and salt and beat for 10-12 minutes, or until stiff peaks form.
- Transfer the marshmallow mixture into a lined pan and use a spatula to smooth it out. Refrigerate it for at least 2 hours, or until set.
- Cut into cubes and then spread peanut butter over the sides of the marshmallows.
- Dip into melted chocolate and place on a parchment lined baking sheet.
- Once all marshmallows have been dipped place in the fridge to allow for the chocolate to set.
