Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Bloom the gelatin: add 1 cup water to a mixing bowl.
- Sprinkle gelatin evenly on top (don’t stir).
- Let it bloom for 5–10 minutes until thick and jiggly.
- In a small pot, add the remaining 1 cup water + monk fruit.
- Heat over medium, stirring until dissolved.
- Bring to a simmer and cook 3–4 minutes until slightly thickened (not full caramel—just syrupy).
- Start mixing the bloomed gelatin on low.
- Slowly stream the hot syrup into the bowl.
- Turn the mixer to high and whip 8–10 minutes until it becomes thick, glossy, and tripled in volume.
- Add salted caramel collagen, vanilla, and a pinch of salt.
- Whip 30 more seconds to combine.
- Line a small baking dish with parchment.
- Spread the fluffy mixture evenly.
- Let set in the fridge for 1-2 hours or overnight.
- Cut + enjoy
- Lift from the pan, slice into cubes, and toss pieces in more monk fruit to prevent sticking.

For extra salted-caramel flavor → sprinkle flaky sea salt on top before setting.
