- Combine your dry ingredients together, then combine wet in a separate bowl
- Pour wet into dry until dough forms
- Place in fridge for 15 minutes
- Roll dough btwn 2 pieces of parchment paper, then take a small oreo-size cookie cutter to create your cookies. I got 26 (13 oreo cookie sandwiches)
- Place on parchment paper and bake at 350 for 7-8 minutes
- Allow to cool on baking sheet then place on cooling rack until cool to touch
- I used Miss Jones organic vanilla icing with natural green dye, piped on half of the cookies
- Place cookie sandwiches in the fridge until frosting has set
- Enjoy!
Notes
Again, these are only green to coordinate with st Patrick's day. Feel free to omit the natural dye or make them any color you wish!
