Homemade Oreos (Gluten and dairy free) (Edit recipe)

Gluten, dairy, and refined sugar free version of your favorite oreo cookies! These are your tradition vanilla iced cookies (just green because I’m a sucker for holiday coordinating colors ☘️), however you can add 1/3 tsp mint extract to make these mint Oreos if you please!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine your dry ingredients together, then combine wet in a separate bowl
  2. Pour wet into dry until dough forms
  3. Place in fridge for 15 minutes
  4. Roll dough btwn 2 pieces of parchment paper, then take a small oreo-size cookie cutter to create your cookies. I got 26 (13 oreo cookie sandwiches)
  5. Place on parchment paper and bake at 350 for 7-8 minutes
  6. Allow to cool on baking sheet then place on cooling rack until cool to touch
  7. I used Miss Jones organic vanilla icing with natural green dye, piped on half of the cookies
  8. Place cookie sandwiches in the fridge until frosting has set
  9. Enjoy!

Notes

Again, these are only green to coordinate with st Patrick's day. Feel free to omit the natural dye or make them any color you wish!
