How to Make Cuban Coffee (Cafecito)
Bold, sweet, and authentically Cuban. This classic cafecito uses a Moka pot and whipped sugar espuma for that signature creamy, caramel-colored foam.

- 111 Water, Fill Moka pot base to just below the safety valve
- 111 Espresso, Cuban coffee (finely ground dark-roast espresso), Enough to fill the filter basket; level off and do not tamp firmly

- 3 - 6 Tbsp3 - 6 Tbsp3 - 6 Tbsp Granulated White Sugar, Use ~½–1 tbsp per 2 oz serving; light brown sugar optional for deeper flavor

- Fill the lower chamber of the Moka pot with water to just below the safety valve.
- Add finely ground coffee to the filter basket, level it, and attach the upper chamber securely (do not over-tighten).
- Place the Moka pot over medium heat with the lid open to monitor the first drops.
- Add the sugar to a heat-safe cup or bowl (about ½–1 tbsp per serving).
- As soon as the first drops of espresso appear, pour about 1 tbsp of it onto the sugar, then return the pot to the heat.
- Vigorously whisk the sugar and coffee until a thick, pale brown paste (espuma) forms.
- When brewing is complete, pour the remaining espresso into the sugar paste and stir gently to combine.
- Serve immediately in demitasse cups, ensuring each cup gets some of the sweet, foamy top.
