Indian Seasonal Citrus & Mint Salad
This Indian-fusion citrus salad is gorgeous, festive, and will brighten your gloomy winter days.
Ingredients
- 2 whole2 whole2 whole Blood Orange, peeled and sliced into 1/4 inch rounds
- 2 whole2 whole2 whole Navel Orange, peeled and sliced into 1/4 inch rounds
- .5 tsp.5 tsp.5 tsp Ground Cinnamon
- .25 tsp.25 tsp.25 tsp Ground Cumin, ground
- .25 tsp.25 tsp.25 tsp ground Coriander
- .25 tsp.25 tsp.25 tsp Cayenne Pepper, (or less if you don't want as much heat)
- 1/4 tsp1/4 tsp1/4 tsp Himalayan Pink Salt, or 1/8 tsp flaky sea salt
- 1/2 whole1/2 whole1/2 whole Arugula, 5oz bag (or greens of choice)
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- .25 cup.25 cup.25 cup Mint Leaves, chopped
- .5 cup.5 cup.5 cup Feta Cheese, crumbled (omit for dairy-free or Whole30)

- Mix all spices, lemon juice, and olive oil in a small bowl (if using regular pink salt, mix in with dressing). This will be your dressing.
- Lay arugula or greens of choice in a salad bowl or plate.
- Lay slices of oranges on top of the arugula.
- Drizzle dressing all over the salad, adding more olive oil if necessary.
- If using flaky salt, sprinkle on top of the salad.
- Sprinkle chopped mint on top, and feta (optional).
- Serve immediately and enjoy!
