For all those who want their man to put a ring on it, I suggest you make this Italian Wedding soup. This soup burst with flavour, it's super hearty and keeps you full. Not to mention the all health benefits with turkey being lean and tryptophan for better sleep. This soup is cozy and will keep you warm this winter.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a bowl mix your turkey, parsley, breadcrumbs, Parmesan, egg, oil and spices until combined (do not over mix).
  2. Form turkey into small meatballs about a dime size in diameter or your choice of size.
  3. Refrigerate your meat balls for 20-30 mins to firm up so they are easier to work with.
  4. Prepare your mirepoix: Celery, carrots & onion diced).
  5. In your pot, add oil, then place meat balls in leaving some space and sauté until slight brown on each side - this step is optional but highly recommended.
  6. ***If you choose to not saute your meats balls feel free to start sautéing your mirepoix*** I highly recommend as it builds flavour.
  7. Remove your meatballs, then add in more oil + mirepoix.
  8. Sauté for 3-4 mins then deglaze with your choice of white wine.
  9. ***Adding wine is optional, but this will add a beautiful flavour and help lift the “fond” that will give your soup an exceptional taste***
  10. Once you’ve let your white wine reduce for about 5-7 mins, add your chicken stock and bring to a boil.
  11. Add your pasta of choice and stir quickly to avoid sticking to the bottom of your pot.
  12. Once pasta is al-dente, add your meatballs, then 2 cups of chopped spinach.
  13. Let this simmer for 15-20 mins then serve.
