Italian Wedding Soup Recipe
For all those who want their man to put a ring on it, I suggest you make this Italian Wedding soup. This soup burst with flavour, it's super hearty and keeps you full. Not to mention the all health benefits with turkey being lean and tryptophan for better sleep. This soup is cozy and will keep you warm this winter.
Ingredients
- 1 lb1 lb1 lb Ground Turkey
- 0.25 cup0.25 cup0.25 cup Parsley
- 0.25 cup0.25 cup0.25 cup Breadcrumbs
- 0.25 cup0.25 cup0.25 cup Parmesan Cheese
- 1 whole1 whole1 whole Egg
- 2 clove2 clove2 clove Garlic
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp dried Oregano
- 1 tsp1 tsp1 tsp Salt, or slightly more, that's up to you!
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 0.25 cup0.25 cup0.25 cup Acini di Pepe Pasta
- 2 whole2 whole2 whole Carrots
- 2 whole2 whole2 whole Celery, sticks
- 1 whole1 whole1 whole Onion
- 0.333 cup0.333 cup0.333 cup White Wine
- 2 cups2 cups2 cups Baby Spinach

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl mix your turkey, parsley, breadcrumbs, Parmesan, egg, oil and spices until combined (do not over mix).
- Form turkey into small meatballs about a dime size in diameter or your choice of size.
- Refrigerate your meat balls for 20-30 mins to firm up so they are easier to work with.
- Prepare your mirepoix: Celery, carrots & onion diced).
- In your pot, add oil, then place meat balls in leaving some space and sauté until slight brown on each side - this step is optional but highly recommended.
- ***If you choose to not saute your meats balls feel free to start sautéing your mirepoix*** I highly recommend as it builds flavour.
- Remove your meatballs, then add in more oil + mirepoix.
- Sauté for 3-4 mins then deglaze with your choice of white wine.
- ***Adding wine is optional, but this will add a beautiful flavour and help lift the “fond” that will give your soup an exceptional taste***
- Once you’ve let your white wine reduce for about 5-7 mins, add your chicken stock and bring to a boil.
- Add your pasta of choice and stir quickly to avoid sticking to the bottom of your pot.
- Once pasta is al-dente, add your meatballs, then 2 cups of chopped spinach.
- Let this simmer for 15-20 mins then serve.
