Jumbo Chicken & Red Pepper Cream Cheese Pockets (Perfect for Game Day!)
These pockets of puff pastry dough are filled with a delicious mixture of cream cheese, roasted red peppers, baked chicken and taco/fajita seasoning mix. An appetizer that's so easy to make and cake be prepared ahead of time too! A perfect way to celebrate game day.
Ingredients
- 3 whole3 whole3 whole Chicken Breast
- 0.5 whole0.5 whole0.5 whole Taco Seasoning - Primal Palate, (1/2 the bag)
- 2 Tbsp2 Tbsp2 Tbsp Salt and Pepper, (to tatse)
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 1 whole1 whole1 whole Puff Pastry, (frozen, I used Tenderflake brand)
- 1 whole1 whole1 whole Egg, (optional - egg wash)
- 0.25 cup0.25 cup0.25 cup Sesame Seeds, black and white
- 227 grams227 grams227 grams Cream Cheese, Whipped, (I used roasted red pepper whipped cream cheese from Philadelphia brand )

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a baking dish add your 3 chicken breasts and coat them in salt, pepper, taco seasoning mix and olive oil generously
- Bake in a preheated oven at 375 for 28 to 30min (until golden)
- While chicken is cooking, prepare your puff pastry surface and dust it with flour so dough does not stick
- Remove pre-made puff pastry from box and begin to roll it out until it reaches about 12inches in size
- Cut the down into three equal long rectangluar parts and set aside
- Once chicken is baked, remove from the oven and allow to cool down to room temperature
- Once chicken is cooled, with two forks begin to shred the chicken and place into a bowl
- Remove whipped cream cheese from container and place it into a big mixing bowl
- Add the shredded chicken into the bowl and mix until cream cheese mixture is combined
- Place 3 tbsp of mixture onto the right side of the puff pastry sheet and fold over the left side - creating a pocket
- Fold over the edges to create a seal and with a fork apply pressure
- Repeat the process for each pocket - you should get 6 big pockets
- Create holes with the fork into each pocket
- Brush a light coating of egg wash to each pocket and sprinkle the black and white sesame seeds on top of each
- Place pockets onto a baking sheet with parchment paper
- Bake at 400 for 15 to 20 minutes until golden brown
- Once golden, remove from oven and place on a wire wrack
- Serve whole or cut into 4 triangle pieces for appetizer bites
- Enjoy!
Notes
Serve whole or cut into triangle pieces. Serving size is for 24 triangle bites. Each square should give you 4 triangles. A total of 6 jumbo appetizers were made. Serve hot or at room temperature. Make in advance and air fry them just before serving to your guests.
