Keto Creme Brûlée (Edit recipe)

The crispy texture of the torched monk fruit might just be the best part of this guilt-free brûlée. The caramelized pudding-like base does come in a very close second, though.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

For the brûlée

  1. Preheat oven to 350℉.
  2. Fill a medium saucepan with water and place it on the stovetop to boil.
  3. In a medium bowl, lightly beat egg yolks.
  4. In another medium bowl, mix together the heavy cream (or coconut milk), monk fruit (or coconut sugar), and vanilla extract.
  5. Once combined, slowly stream into the egg mixture and whisk everything together until you reach a uniform color.
  6. Place four ramekins into a 9″ x 13″ pan.
  7. Evenly distribute the egg mixture between the ramekins.
  8. Pour the boiling water from the saucepan into the 9″ x 13″ pan until the water is ⅔ up on the ramekins.
  9. Bake in the oven for 40 minutes.
  10. Take the pan out of the oven.
  11. Carefully place the ramekins on a wire rack. Cool to room temperature for 2 hours.
  12. Once they have come to room temperature, tightly wrap with plastic wrap and refrigerate overnight.

For the topping

  1. Remove the plastic wrap and lightly cover the top with the granulated monk fruit (or maple sugar).
  2. Use a hand torch to melt the monk fruit or maple sugar to the point it slightly burns. Enjoy immediately!
