Hot summer days call for cooling desserts. And what's a better dessert than an ice cream! I was inspired to make this caramel ice cream when I got a free sample of Lakanto's Date Sugar with Monk fruit.  I knew date sugar tastes like caramel so I just thought of caramel ice cream! Another wonderful thing is that since this date sugar is mixed with monk fruit, you only need to use about 70% less sugar than you normally do! Which means what you have here is a delicious dairy free caramel ice cream that is also low in sugar and low in calories!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place ice cream maker bowl in the freezer 12 hours before making the ice cream.
  2. Take a mixing bowl and measure the exact amount of coconut milk using two cans of coconut milk shaking the cans well before using the milk. Add all the rest of the ingredients and place on a stove at low heat. Keep whisking / stirring continuously for about 5 minutes until the mixture slowly becomes thick. Turn the heat off and let the mixture cool for about 30-45 minutes before adding to the ice cream maker.
  3. Start the ice cream maker and pour the mixture slowly through the spout. Follow ice cream maker's instructions for churning (around 40 minutes). Transfer the mixture into a container and place in the freezer for a couple more hours for the ice cream to set fully.
