Microwave Rocky Road Fudge
Turn that frown upside down with this thick chocolatey fudge stuffed with soft marshmallows and crunchy walnuts!
Ingredients
- 1.25 oz1.25 oz1.25 oz Dark Chocolate, chopped (half a Signature Dark bar)
- 1 1/2 cups1 1/2 cups1 1/2 cups Heavy Cream (Whipping Cream)
- 1/4 cup1/4 cup1/4 cup Unsalted Butter
- 3 Tbsp3 Tbsp3 Tbsp Swerve Confectioners (powdered)
- 1 tsp1 tsp1 tsp Vanilla Extract
- 10 oz10 oz10 oz Marshmallows (gluten-free), (Dandies’ vegan marshmallows)
- 1 cup1 cup1 cup Organic Walnuts, chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line an 8” x 8” baking pan with parchment paper and set aside.
- In a microwave-safe bowl, combine the chopped chocolate, heavy cream and the butter.
- Microwave for about 2-3 minutes on a high setting, stopping every 30 seconds to stir, until the mixture is smooth.
- Carefully remove from the microwave and let cool for 2-3 minutes.
- Stir in the Swerve Confectioners sugar and vanilla extract. Then add the walnuts and half of the marshmallows.
- Pour the mixture into the baking pan, spread evenly. Then add the remainder of the marshmallows on top. You can push them into the fudge mixture.
- Refrigerate for 2-3 hours. Then cut them into squares.
