My most requested BBQ side salad just got a little smarter. Same sweet, tangy dressing I've been making forever,  just swapped the regular sugar for Lakanto's cane sugar with monk fruit.  All the flavor, less guilt. See you at the potluck table.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook the bacon until nice and crispy. Let it cool on a paper towel-lined plate, then crumble it into bite-sized pieces.
  2. Rinse the broccoli and scallions. Pat the broccoli dry so the dressing sticks better, then chop it into small, bite-sized florets. Slice up the scallions.
  3. In a large mixing bowl, toss together the broccoli, scallions, shredded cheddar, and chopped bacon.
  4. In a separate bowl or measuring cup, whisk the mayonnaise, cane sugar, and vinegar until smooth.
  5. Pour the dressing over the broccoli mixture and mix until everything’s evenly coated.

Notes

No need to blanch the broccoli. It softens just enough in the dressing while staying crisp and fresh. Start with a portion of the dressing if you prefer it less creamy.
