korean bbq beef nachos
these aren't your average nachos. they have no cheese, BUT don't let that scare you off. these are so freaking tasty, as they are bursting with all the korean inspired flavors. the korean bbq beef is so tender & delicious, but you could easily sub in my bulgogi meat recipe. heck, if you want to add a little monterey jack, pepper jack, or mozzarella cheese on these, I am sure that would still be super tasty 😉

- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 2 Tbsp2 Tbsp2 Tbsp Kimchi Juice
- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste
- 0.5 tsp0.5 tsp0.5 tsp Ginger, Ground
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Salt and Pepper
- 0.5 tsp0.5 tsp0.5 tsp Gochugaru (Korean Chili Pepper Flakes)
- 3 lb3 lb3 lb Beef Chuck Roast, any roast will work
- 0.5 cup0.5 cup0.5 cup Water
nachos
- kimchi coleslaw (click for recipe)
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt, for creamy gochugaru sauce
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Dairy-Free Buffalo Sauce - Primal Kitchen, for creamy gochugaru sauce
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto, for creamy gochugaru sauce
- 2 Tbsp2 Tbsp2 Tbsp Kimchi Juice, for creamy gochugaru sauce
- 0.5 tsp0.5 tsp0.5 tsp Gochugaru (Korean Chili Pepper Flakes), for creamy gochugaru sauce
- 1 tsp1 tsp1 tsp Lime Juice, for creamy gochugaru sauce
- Grain-Free Dip Chip - Siete Foods
- Cucumber, diced
- Cilantro, finely chopped
- Sesame Seeds
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
korean bbq beef
- to a food processor, add all ingredients for korean bbq sauce (everything but the roast).
- to a slow cooker, add roast & korean bbq sauce.
- slow cook on low for ~8 hours or until easily shreds.
- shred beef, then mix in sauce & cook for another 30-45 minutes.
nachos
- make a batch of kimchi coleslaw ahead of time to allow for cooling before serving.
- make creamy gochugaru sauce, by combining all ingredients in a bowl & mixing until smooth.
- to build nachos, first start with tortilla chips, then add on kimchi coleslaw, korean bbq beef, any other toppings of choice, & drizzle with creamy gochugaru sauce.
