Korean Beef and Coconut Rice Bowls
My favorite cuisine of all time is Asian! I love the flavors and always attempt to make something delicious at home. I have a variety of sauces and spices that I try to blend together as best as I can. I had a pound of ground beef I wanted to use up, so I tried making korean beef bowls that I think turned out pretty dang good. You be the judge, though!

- In a small sauce pan, combine jasmine rice and coconut milk. Turn on medium-high heat and bring to a simmer, stirring frequently. Once it comes to a boil, lower heat and cover with lid.
- While the rice is starting to cook, heat 1tbsp olive oil in a large pan on medium heat.
- Add 2tbsp minced garlic and bring to a simmer.
- Add in ground beef, chopping and stirring occasionally until no longer pink.
- While the beef is cooking, combine brown sugar, soy sauce, sesame oil, red pepper flakes and ginger to a small bowl and mix well.
- When beef is finished cooking, add sauce into pan and combine.
- Fluff your rice with a fork.
- Serve hot and top with green onions and sesame seeds if you like!
Notes
I have made a lot of coconut rice, and tried a lot of coconut milk. They are NOT all created equal. My best recommendation is Trader Joes Full Fat Coconut Milk (in the yellow can). If you cannot find that, definitely make sure you are using full fat. It makes a difference.
