little bites protein muffins
i love all things nostalgic — especially my favorite little treats. 🧁✨
so of course, i had to upgrade them: protein + fiber boosted, gluten-free, little to no added sugar, & just as tasty (if not better 😌).
these little bites–inspired muffins are soft, fluffy, & perfectly poppable — with options for chocolate chip, blueberry, or crumb cake (ft. BTR nation's cinnamon cookie dough bar for that streusel moment 👀).
childhood fave… but make it functional. ✨
Ingredients
dry ingredients
- 1 cup1 cup1 cup Almond Flour

- 1/2 cup1/2 cup1/2 cup Cassava Flour, or GF flour of choice

- 1/4 cup1/4 cup1/4 cup Coconut Flour

- 1/2 cup1/2 cup1/2 cup Vanilla Protein Powder - Be Well by Kelly

- 2 Tbsp2 Tbsp2 Tbsp Psyllium Husk, Ground, or ground chia/flax

- 1/2 cup1/2 cup1/2 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/2 cup1/2 cup1/2 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 2 tsp2 tsp2 tsp Baking Powder

- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- 1/4 tsp1/4 tsp1/4 tsp Sea Salt

wet ingredients
- 1 cup1 cup1 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 333 Eggs
- 1/4 cup1/4 cup1/4 cup Butter, Unsalted, or coconut oil, melted & cooled

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1/2 cup1/2 cup1/2 cup Water, or milk
add-ins
- Blueberries, for blueberry version
- Sugar-Free Dark Chocolate Chips, for chocolate chip version

- Cinnamon Cookie Dough Superfood Bar - B.T.R. Nation, for crumb cake version

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- reheat oven to 425.
- to a large bowl, add all dry ingredients; set aside.
- to a mixing bowl, whisk together all wet ingredients, then fold into dry ingredients bowl.
- using 3 mini 24 insert silicon muffin tins, add a scoop of muffin batter to ~¾ of the way full.
- top each muffin with add-ins of choice, then bake for ~5 minutes.
- reduce oven heat to 350, then finish baking for ~10-12 minutes or until a toothpick comes out clean.
- allow to cool completely, then pop out of muffin tins.
