LMNT chocolate covered protein caramels
electrolytes are one of my favorite things to talk about as a dietitian, so naturally I had to find a way to incorporate them into a delicious recipe. these little caramel bites are just a true salty delight!
Ingredients
- 1 cup1 cup1 cup Medjool Dates, pitted & smoked in warm water for 10 minutes
- 2 Tbsp2 Tbsp2 Tbsp Organic Creamy Peanut Butter, or nut butter of choice
- 0.25 cup0.25 cup0.25 cup Peanut Butter Powder, or nut butter powder of choice
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.75 cup0.75 cup0.75 cup Sugar-free Dark Chocolate Chips
- 111 LMNT Chocolate Caramel Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- add dates, nut butter, pb powder, protein powder, & vanilla extract to a food processor & blend until smooth.
- using a cookie scoop, scoop out little balls & transfer to a lined baking sheet OR put into silicon molds.
- freeze for 20-30 minutes to set.
- in a bowl, microwave chocolate in 30 second intervals until melted.
- remove balls from freezer; dip into chocolate mixture (use a spoon to roll ball around into, rather than just plopping in the bowl of chocolate) & sprinkle with LMNT salt.
- store in the fridge or freezer (for longer storage) until ready to eat.
