loaded mediterranean cauliflower rice bowls
cauliflower rice on it's own - no bueno. cauliflower rice mixed with all these delicious mediterranean flavors - absolutely delicious! this veggie is full of fiber, but not necessarily full of flavor… & should we mention the smell? this side dish is truly so flavor packed, you'll forget that you are eating cauliflower rice!
Ingredients
- 8 oz8 oz8 oz Baby Bella Mushrooms
- 1 cup1 cup1 cup Artichoke Hearts, ~1/2 can, drained & finely chopped
- 24 oz24 oz24 oz Frozen Cauliflower Rice
- 1 cup1 cup1 cup Chickpeas, ~1/2 can, drained & rinsed
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 tsp1 tsp1 tsp Italian Seasoning
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper
- 1 oz1 oz1 oz Kalamata Olives, sliced
- 1 Tbsp1 Tbsp1 Tbsp Capers
- 1 oz1 oz1 oz Sun Dried Tomatoes, sliced
- 0.25 cup0.25 cup0.25 cup Feta Cheese
- 1 oz1 oz1 oz Prosciutto, crisped in a pan for 2-3 minutes

- in a large pan, saute mushrooms for 8-10 minutes.
- add in artichoke hearts & garbanzo beans; cook for an additional 3-4 minutes.
- add in cauliflower rice & seasonings; cook until moisture is evaporated.
- fold in any add-ins you like right before serving.
- serve with a protein (seafood or pork tenderloin pairs well with this dish) & fresh herbs.
