Easy to make loaded nachos, perfect for get togethers, family dinners, or game day parties.

Ingredients

  • 16 oz Corn Tortilla Chips, I like the Xochitl brand because they are light and thin
  • 2 lb Ground Beef, Can sub in ground turkey, or shredded chicken, beef, or pulled pork
  • 3 Tbsp Taco Seasoning, or follow amounts on taco seasoning pkg
  • 0.25 cup Hot Water, use only if using homemade taco seasoning.
  • 15 oz Black Beans, You can use 1 -2 cans, can sub Red or Black, rinsed and drained
  • 8 oz Mexican Cheese Blend, can sub in cheddar cheese
  • 15.5 oz Salsa, use desired heat level
  • 3-4 whole Green Onion (Scallion), sliced
  • 1 head Lettuce, Romaine, green leaf or romaine, shredded
  • 1-2 whole Tomato, chopped
  • 2 whole Avocado, diced, can sub in guacamole
  • 2 Tbsp Cilantro, Fresh or parsley, chopped
  • 8 oz Sour Cream, optional
  • 1-2 whole Jalapeño, optional, sliced
  • 8 oz Black Olives, optional, sliced

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pre-heat oven to 400°F, then line a baking sheet with parchment paper. Set Aside.
  2. Brown the ground beef until no longer pink, then add the taco seasoning (homemade) and 1/4 cup of water. Or use directions on the taco seasoning package. Simmer for a few minutes to blend the flavors.
  3. While the ground beef is cooking, chop the tomatoes, onions, cilantro, avocados, jalapeños, and shred the lettuce.
  4. Grab the baking sheet and add a light layer of the tortilla chips.
  5. Top tortilla chips lightly with cheese, some ground beef, some beans, and a bit of salsa.
  6. Continue to layer chips, cheese, beef, beans, salsa until you run out of meat and beans. Then top final layer with tortillas and cheese.
  7. Bake for 10 minutes or until the cheese is melted.
  8. Top with the tomatoes, onions, cilantro, avocados, lettuce, etc.
  9. You can dollop sour cream, avocado/guacamole on top of the veggies or serve it on the side.

Notes

To reduce quantities 1lb of ground beef will feed approximately 3-4 people. If you like a lot of cheese use 2 8 oz packages. I use homemade taco seasoning which is 3 tbsp, if you are using a store bought package then follow package instructions.
